This is my new go to meal for the summer. It is healthy, easy, and inexpensive- my three favorite words :)
1lb Sirloin Steak Tips
Baked Potatoes (I used one sweet and one Idaho potato)
1 Summer Squash
Garlic Herb Steak Seasoning
Salt and Pepper
Cook the potatoes. I bought a sweet potato that was microwavable and stuck that in for 6 minutes. When that came out I wrapped the Idaho potato in a paper towel and put it in the microwave for 8 minutes. I am fully aware that oven cooked potatoes are MUCH better, but they take around 30 minutes to cook and my goal was QUICK! I had these cooking while I made the squash and steak.
Wash and cut the summer squash. Put it in a pan with some olive oil, salt, and pepper. Let it cook for 5-6 minutes or until the squash is soft and wet. Flip occasionally.
Cook the steaks. While I was prepping the potatoes and squash, I let the steak sit in the Marinade. Once the squash was on and the microwave was buzzing I added some olive oil to a pan and threw on the steak tips. Turn steak until browned on all sides and cooked as desired. It took me 10 minutes to cook the steaks and I made them medium rare.
Eat! I added a spinach salad with my potato and cut up some pears for dessert, but all those little details are up to you. I cooked a cup of rice as well to throw in with my leftovers for the next day!
