Now that school is out, I want to try some new meals and snacks during the summer. This is number 1 on my June To Do List. None of these have I tried before. I will post pictures and reviews once I make them.
My goal is to try all of these meals during the month of June!
1. Caprese Pasta Salad
I love Pasta Salads! I usually make a tuna pasta salad with small pasta shells but this one is a new twist I can't wait to try.
Time: 20 minutes (cook pasta, cut and mix)
Perfect For: Lunch on the picnic blanket in the back yard
2. Chicken Caesar Salad in a Lettuce Wrap
I will be honest, I have done something similar to this before. D and I like to do a BLT in a lettuce wrap and it is FAN-tastic. This is a nice twist to that.
Time: 20 minutes (less if you pre-cook your chicken)
Perfect For: Eat and Go
Hint: The restaurant Jimmy Johns has a section of the menu called "Unwiches" which are lettuce wrapped sandwiches. That is where we got the idea for the BLT lettuce wrap from. They are a perfect treat when you are trying to stay away from lots of bread.
3. Homemade Popsicles
Easy, fun, and you can be as creative as you would like. You can get popsicle trays at walmart, target, and nearly any home goods store.
I couldn't choose just one popsicle because I found so many! The first one is a raspberry yogurt popsicle and the 2nd one is a kiwi and lime juice mix.
Time: (5 minutes of prep and 2-3 hour to sit in the freezer)
Perfect For: A hot summer day by the pool!
4. Patriotic Blueberry Triffle
This is my plan for our 4th of July party this year. It is cute, light, and looks like a blast to make.
Time: 25 minutes (longer if you don't get pre made angel cake

5. Pizza Skewer Balls and garlic sauce
Not only are these the coolest thing I've ever seen, they also look so good. My parents are coming in July and I want to make these to snack on while we see outside in the backyard.
Time: 35 Minutes (marinade, prep, roll, cook, cool down)
