My husband can testify that there is nothing that I love to eat more that BLTs and Chicken Salad. However, with trying to lose this baby weight, neither those mayo filled items are too great for me. A few months ago I posted my healthier alternative to the BLT, and now I have talked chicken salad.
This version of the popular summer sandwich is filled with vegetables and fruits, and it replaces the mayonnaise with greek yogurt and low fat cream cheese. I hope you enjoy it.
Time: 30 minutes to cook chicken, 15 minutes to assemble
Makes: 6 large lettuce wraps
Important addition to make your chicken salad fantastic: A cute little boy to look at and talk to!
You can add tons of extras to chicken salad to make it unique. My favorite addition is spicy mustard!
