I am a day early with my Monday Munchies post but we can all just pretend and not rat on me :)
I am usually done with work by noon or 1 every day this week so I have lots of time on my hands to try some new cooking and baking ideas! Lemons and Strawberries are my favorite summer flavors so I decided to make as many things as I could with one box of strawberries and 6 lemons!
Here are my results:
1. Strawberry Lemonade
This one was nice and easy! I squeezed juice out of 7 lemons, pureed 10 strawberries in the blender, added water, added sugar till I tasted and it wasn't bitter, and threw in some fresh cut strawberries.
Time: 10 minutes
1 box of strawberries
2. Strawberry Sorbet in Lemon Bowls
This was a much much much more involved process. Total it took me about 5 hours but I wasn't only actively working for 2 of those.
The lemon bowls were the shells left over from the lemons squeezed into the lemonade. I removed all of the strings and guts of the lemon that were left over and cleaned out the inside. I put those in the freezer to harden.
Need: 1 lb strawberries
1/2 cup of water
1 cup of sugar
1/4 cup of lemon juice
pinch of salt
First cut up the strawberries and pureed them in the food processor untill they looked like baby food.
2nd step: add the sugar and the water to a sauce pan and bring to a boil. The sugar should completely dissolve into the water. Let this cool.
Next, I add your syrup that you just let cool, the lemon juice, and a pinch of salt to the pureed strawberries and mix for about a few minutes. You want the mixture to be liquid and not chunky.
Final step: Now this was the tricky part cause I didn't have an ice cream maker. I put my liquid into a metal cake pan and covered with tin foil. For the next 4 hours I had to take it out of the freezer and mash up the chunks that would form and smooth it back out every 30 minutes. If you have an ice cream maker the churning is done for you.
It turned out wonderfully! In the future I would half the sugar portion because the strawberries were sweet in and of themselves. I made a watermelon flavor as well which is the same process just with a different fruit!
3. Lemon Bars
Prep for these is very easy. I used the lemon juice and lemon peals from the lemonade.
Ingredients for crust:
1 cup flour
1/2 cup butter
1/4 cup sugar
Combine ingredients for crust, put into a square baking pan (ungreased cause of all the butter in the crust) and bake for 20 minutes at 350.
While crust is baking make the filling.
Ingredients for lemon filling:
1 cup sugar
2 Tbsp flour
1/2 tsp baking powder
2 Tbsp lemon juice
1 tsp lemon peel
Combine all of the ingredients and beat until frothy. Pouf filling over the crust and bake for another 25 minutes or until golden brown on top. Remove, let dry, and cover with powdered sugar!
4. Strawberry Lemonade Popsicle
Easy Peasy. I poured the lemonade that I made into Popsicle molds and threw in a few strawberries. I let them sit for 6 hours and then enjoyed!
I bought the Popsicle molds from Target for 12 bucks.
