My mom use to make Zucchini Bread all of the time when I was growing up, but I hadn't had any in years. When a friend of ours gifted us some HUMONGOUS zucchini's from his garden, we got inspired.
I doctored the recipe a bit by adding an extra tsp of cinnamon and replacing half of the sugar with plain applesauce. You can also add chocolate chips or walnuts to mix it up!
